Xiaomian , or "small noodles," is a traditional numbingly hot noodle soup which originated in southwest China's Chongqing Municipality. Together with hotpot, xiaomian  has become an indispensable part of Chongqinger's diet and a valuable representative for the city.

Gao Wei, 37, is the owner of Fat Girl Noodles Restaurant--a popular destination for xiaomian  in Chongqing. It took her more than two decades to become a restaurateur worthy of national fame from a being migrant vendor operating from a small stand.

Since 2005, Gao's legend has prompted many people to flock to her restaurant to learn how to make xiaomian . Up till now, her trainees have started up more than 1,000 noodle restaurants at home and abroad. They are carrying forward the brand of Chongqing Xiaomian , Gao said.

"I want my Fat Girl Noodles Restaurant to keep going on for centuries," Gao said. To make her dream come true, Gao and her husband Shao Wei have continued to select ingredients and make seasonings by themselves. She believes that delighting every customer with high-quality xiaomian  is the key to success.
